Yields: 10 Muffins


Ingredients

1 1/2 cups plus 2 tablespoons Flour
3/4 cup Sugar
2 teaspoons Baking powder
1/4 teaspoon Salt
1/4 teaspoon Ground nutmeg
1/2 cup Milk
1 Egg beaten
1/3 cup Butter melted
Topping:
1 teaspoon Cinnamon
1/2 cup Sugar
1/2 teaspoon Vanilla
1/3 cup Butter melted


 
Instructions
Combine first five ingredients of muffins. Add milk, egg, and 1/3 cup melted butter. Mix thoroughly. Place paper cups in muffin tin or grease and flour muffin tin. Fill tins 3/4 full and bake at 400 degrees for approximately 15 minutes until lightly browned. Remove from pan immediately and brush on top with remaining 1/3 cup melted butter. Get topping mixture ready ahead by mixing sugar and cinnamon, stir in vanilla with a whisk. Roll tops of muffins in cinnamon/sugar/vanilla mixture. Pile on more of the mixture if desired. Serve warm.
